Ingredients

Here are the ingredients you need

  • 1 lobster
  • Peeled king prawns
  • 260g round short-grain rice
  • 2 ripe tomatoes
  • 2 garlic cloves
  • Extra virgin olive oil
  • Sweet smoked paprika from La Vera
  • Pink salt
  • 700ml fish stock or fumet

Step by step

Method

  1. 1Heat a drizzle of olive oil in the paella pan and sear the lobster, which you will have cut into pieces beforehand.
  2. 2Repeat with the king prawns, then set both aside.
  3. 3Add the sweet paprika, stir gently so it doesn't burn, and immediately add the grated tomatoes.
  4. 4Once the tomato has cooked down, add the minced garlic and let it cook gently without burning.
  5. 5Stir in the rice and toast it for a minute so it absorbs all those wonderful flavors.
  6. 6Pour in the hot stock, then return the lobster and prawns to the pan.
  7. 7Cook for 15min for rice that has just the right bite, then take it off the heat, cover with a clean kitchen towel, and let it rest for 3min.
  8. 8Done! Our LOBSTER RICE is ready to serve.

Extra tips

  1. 1If you prefer softer rice, cook it over the heat for 18min, then rest off the heat for 3min (be sure to add a little extra splash of stock as well).
