Cucumber and Canned Sardine Salad

Salads
Be the first to rate it!

I make this sardine and cucumber salad in 10 minutes, without turning on the stove, using everyday ingredients. I love turning the cucumber into noodles with a spiralizer and pairing it with sardines in extra virgin olive oil, olives, lime juice, and a bit of red chili. The cucumber adds a lovely crunch, and the lime pairs beautifully with the rich flavor of the sardines.

If you're looking for a canned sardine salad for those days when you want something effortless, this recipe serves two. I make it right before eating to enjoy the fresh, crisp cucumber, and I adjust the chili to taste depending on how spicy I want it.

Frequently asked questions

How can I prep the cucumber if I don't have a spiralizer?

You can cut it into thin ribbons using a vegetable peeler or simply slice it thinly with a knife. The shape will be different, but the combination with the sardines and dressing works just as well.

Can I make this salad ahead of time?

You can keep the spiralized cucumber in an airtight container in the fridge and add the sardines, olives, and dressing just before serving. If it's already dressed, keep it chilled and enjoy it the same day, as the cucumber will release moisture over time.

Can I make it without chili or swap lime for lemon?

Yes, you can leave out the chili if you don't like heat, and you can substitute lemon juice for the lime. Add the juice gradually and taste as you go.
