Ingredients

Here are the ingredients you need

  • 250g multigrain flour
  • 60g almonds
  • Pinch of pink salt
  • 120g erythritol (or your sweetener of choice)
  • 1 tablespoon cinnamon
  • 90ml Esencial Olive extra virgin olive oil

Step by step

Method

  1. 1Toast the flour in the oven for 15min at about 160ºC, watching closely so it doesn't burn.
  2. 2Repeat the process with the almonds and a pinch of salt.
  3. 3Grind the toasted almonds finely.
  4. 4In a mixing bowl, sift together the sweetener and cinnamon.
  5. 5Add the ground almonds.
  6. 6Sift in the toasted flour as well.
  7. 7Turn on your stand mixer or start kneading by hand.
  8. 8Gradually pour in the olive oil.
  9. 9Mix until all the ingredients come together into a cohesive dough.
  10. 10Let the dough rest in the fridge for 30min.
  11. 11Gently press the dough out with your hands and shape your polvorones.
  12. 12Transfer them carefully onto a baking tray, as the dough is quite delicate.
  13. 13Bake (bottom heat only) at about 160ºC until lightly golden.
  14. 14Finally, let them cool completely and dust with a blend of cinnamon and sweetener.
  15. 15All done! Our extra virgin olive oil polvorones are ready.
