Today we're making a no-bake lemon cheesecake, one of those cakes you can't wait to share and enjoy without getting stuck in the kitchen. With spreadable cream cheese and plain skyr, we get a lovely creamy filling scented with lemon zest. All we have to do is prepare the crust, blend the filling, and let it chill in the fridge overnight.

Prep: 20 minCook: 25 minServes: 8

Ingredients

Here are the ingredients you need for the crust

  • 100g almond flour or whole grain biscuits
  • 1 teaspoon homemade date syrup
  • 1 teaspoon coconut oil

Here are the ingredients you need for the cheesecake

  • 2 tubs of cream cheese
  • 2 plain skyr yogurts
  • 1 glass of unsweetened soy milk
  • 5 gelatin sheets
  • 1 lemon

Step by step

Method

  1. 1Mix the crust ingredients in a bowl until well combined.
  2. 2Transfer the mixture to the cake pan and, using the back of a spoon, spread and press it down until firm and compact.
  3. 3Now soak the gelatin sheets in cold water to bloom, and heat the plant milk in the microwave.
  4. 4Add the cream cheese and skyr to the blender jug.
  5. 5Squeeze out the bloomed gelatin sheets well and stir them into the hot plant milk so they dissolve.
  6. 6Once dissolved, pour the milk into the blender jug and blend thoroughly.
  7. 7Wash the lemon and finely grate its zest.
  8. 8Fold the zest into the blended mixture and pour everything gently over the crust (use a spoon to break the fall so you don't damage the base).
  9. 9Chill in the fridge overnight.
  10. 10And that's it! Now we can enjoy our no-bake lemon cheesecake.

Notes

  1. 1You can add sweetener to the cheese and yogurt mixture if you like it on the sweeter side. Personally, the touch of date in the crust is plenty for me.
