Stuffed Lettuce Boats

These lettuce boats stuffed with tuna and tomato are a fresh, easy idea that I whip up in just 15 minutes, without ever turning on the stove. I love serving them as a shared appetizer, a light starter, or for an easy lunch. A touch of fresh coriander, extra virgin olive oil, and mayonnaise bring the filling together without any fuss.

To keep the lettuce leaves crisp, the secret is making sure the leaves are thoroughly dried and the canned tuna is well drained before assembling. If the tomatoes release too much liquid, drain that off too. Feel free to adapt the filling to your taste or drizzle over your favorite sauce; I always recommend putting them together right before serving.

Frequently asked questions

Can I make these stuffed lettuce boats ahead of time?

Yes, but store the washed, completely dried lettuce leaves separately from the filling in airtight containers in the fridge. For the best texture, enjoy them within 24 hours and add the mayonnaise right when assembling.

Can stuffed lettuce boats be frozen?

I wouldn't recommend it: lettuce and tomatoes lose all their crispness once thawed, and mayonnaise tends to split. They are definitely best enjoyed fresh.

What can I use instead of coriander?

You can easily swap it for fresh flat-leaf parsley or simply leave it out. The tuna, tomato, and dressing will still give the filling plenty of delicious flavor.
