This chicken and nectarine salad is one of those combinations I turn to when I want to switch things up without complicating life. I use roast chicken I already have on hand and, in 10 minutes, toss it with watercress, avocado, black olives, and the sweet touch of nectarine. The quantities are for one person, so it's super handy for a meal when I'm on my own.
What I love about this watercress and chicken salad is the contrast of flavors and textures: the avocado adds creaminess and the fruit brings freshness. To dress it, all I use is lime juice, salt, and extra virgin olive oil; it doesn't need a complicated dressing.
