Watermelon and Avocado Salad

Today I'm making a watermelon and avocado salad, the kind of dish that feels so refreshing on the table once warm weather arrives. It's ready in 10 minutes and the amounts serve two, making it perfect to share as a starter or side. I love the contrast between the sweet watermelon, the creamy avocado, and the salty touch of the cheese.

In this watermelon, avocado, and feta salad, pistachios add a lovely crunch while fresh cilantro brings a burst of freshness. A simple dressing of lime, extra virgin olive oil, and black pepper ties all the flavors together without overpowering them. To enjoy it at its best texture, I recommend assembling it right before serving.

To keep mixing up your salads, I recommend my watermelon and feta salad and my cucumber and avocado salad.

Frequently asked questions

Can I make this watermelon and avocado salad ahead of time?

You can cut the watermelon ahead of time and keep it chilled in a sealed container, and mix the dressing separately. Add the avocado, feta cheese, pistachios, and dressing right before serving so everything keeps its best texture.

Can this salad be frozen?

I wouldn't recommend it: once thawed, watermelon loses its crisp firmness and becomes watery, and avocado also changes in texture. If you have leftovers, store them covered in the fridge and enjoy them preferably the next day.

Can I add tomato to this watermelon and avocado salad?

Yes, even though it's not in the original recipe, you can add diced and well-drained tomato. Toss it in when assembling the salad so it doesn't release too much liquid.
