Today I'm making braised chicken drumsticks with ripe tomatoes and sweet onions, one of those rustic, home-style recipes that just invites you to take your time. I cook them in a Dutch oven with white wine and a classic Catalan picada of almonds, hazelnuts, garlic, and toasted bread, which adds body and incredible depth to the sauce.

If you're looking for tender braised chicken drumsticks for a family meal, this recipe serves six generously. Cooking everything low and slow allows the meat to become wonderfully tender while the flavors of the tomatoes, onions, and garlic melt together. I like to serve them with rice or plenty of crusty bread so not a single drop of sauce goes to waste.

Ingredients

Here are the ingredients for 6 servings

  • 12-14 chicken drumsticks
  • 6 Ripe tomatoes
  • 2 Large sweet onions
  • 1 Head of garlic cloves
  • 1 glass white wine
  • 1 glass water
  • Extra virgin olive oil
  • Pink salt

For the picada

  • 10 almonds – 10 hazelnuts – 2 garlic cloves – 1 piece toasted bread

Step by step

Method

  1. 1Grind the picada ingredients together until finely crushed, then set aside.
  2. 2Add a splash of olive oil to the pot, season the drumsticks with salt, and sear until nicely browned all over; remove and set aside.
  3. 3In that same oil, cook the sliced onions until soft and golden brown.
  4. 4Return the chicken to the pot, pour in the glass of white wine, and simmer gently for a couple of minutes to let the alcohol evaporate.
  5. 5Add the chopped tomatoes, garlic cloves, the glass of water, and the prepared picada.
  6. 6Stir everything together well, cover, and cook over medium heat for 25-30 minutes.
  7. 7Stir in a little freshly chopped parsley if you like.
  8. 8Let the dish rest off the heat for as long as possible before serving so the flavors settle and deepen.
  9. 9Enjoy these BRAISED CHICKEN DRUMSTICKS with some steamed rice or a good crusty loaf of bread.
