Ingredients
Here are the ingredients you'll need
- 100g cornstarch
- 100g cooked shredded chicken
- 70g goat cheese
- 1 onion
- 1 handful fresh spinach
- 600ml plant-based milk
- Ground nutmeg
- Himalayan pink salt
- Extra virgin olive oil
- Whole wheat breadcrumbs
- Eggs
Equipment
- Air fryer
Step by step
Method
- 1In a small pot, gently sauté the finely diced onion with a drizzle of olive oil over low heat.
- 2Once softened, add the cornstarch and cook for a minute, stirring constantly so it doesn't burn.
- 3Pour in the plant-based milk, and add the nutmeg, salt to taste, and pepper.
- 4Mix everything well with a whisk so the cornstarch dissolves completely and no lumps form.
- 5For the dough to turn out smooth, take your time and don't stop whisking.
- 6When it begins to thicken, fold in the shredded chicken and keep stirring.
- 7Turn off the heat and stir in the crumbled goat cheese along with the finely chopped tender spinach leaves.
- 8Mix everything thoroughly and spread the dough onto a shallow dish or tray.
- 9Once cooled, cover with plastic wrap touching the surface of the dough. Chill in the fridge until the next day (about 24 hours).
- 10Shape into croquettes and dredge them in breadcrumbs, beaten egg, and breadcrumbs again.
- 11At this stage, you can cook them straight away or freeze them.
- 12I cook mine in an oil-free Actifry air fryer, but you can also bake them in the oven or fry them.
- 13Done! Now we can enjoy our CHICKEN, GOAT CHEESE, AND SPINACH CROQUETTES.
