Today we're making a turkey stew with potatoes, chickpeas, and green beans, one of those cozy spoon dishes we all crave when we want a comforting homemade meal. We cook it in the pressure cooker with a hint of smoked paprika and a broth that's just begging for bread dipping.

Prep: 15 minCook: 45 minServes: 4

Ingredients

Here are the ingredients for 4 servings

  • 500 g turkey breast cubes
  • 2 large potatoes
  • 1 jar cooked chickpeas
  • 300 g frozen green beans
  • 1 handful mushrooms
  • 1 tbsp tomato paste
  • Water
  • Pink salt
  • Smoked paprika
  • Extra virgin olive oil

Step by step

Method

  1. 1In the pressure cooker, add a splash of extra virgin olive oil and sear the turkey cubes.
  2. 2Next, add the frozen green beans along with the tablespoon of tomato paste and sauté briefly.
  3. 3Rinse the cooked chickpeas under cold running water and add them to the pot.
  4. 4Peel and roughly crack the potatoes into chunks, thinly slice the mushrooms, and add both to the pot.
  5. 5Season with salt and smoked paprika.
  6. 6Pour in enough water to sit about two fingers above the ingredients.
  7. 7Cook for 35 min over medium-low heat from the moment the steam valve starts hissing.
  8. 8Once the time is up, release the pressure and open carefully.

Extras

  1. 1The first few minutes while the cooker heats up and builds pressure don't count toward the cooking time.
  2. 2You can make this without a pressure cooker by covering a standard pot and letting it simmer a bit longer.
  3. 3It works wonderfully with any other meat you prefer.
  4. 4Jarred or canned chickpeas hold up well and won't turn mushy.
  5. 5You can swap the water for vegetable, beef, or chicken broth for extra depth of flavor.

Tips and tricks

BATCH COOKING

It keeps beautifully in the fridge for 2-3 days.

I don't recommend freezing this dish, as the potatoes won't hold their texture.
