Today I'm making coquinas a la marinera with white wine and crushed tomatoes, the kind of dish that practically demands a loaf of crusty bread on the table for mopping up every last drop of sauce. Whether you know these small clams as coquinas, tallarinas, or tellinas, here is a recipe with garlic, onion, and a touch of heat that you can adjust completely to your liking.

The tomato base and fish stock give the sauce wonderful depth, while a spoonful of cornstarch helps thicken it up just right. I love serving these to share during a weekend lunch: the amounts are meant for four people and take about 45 minutes between prep and cooking. Let's tie on our aprons and get cooking!

To round out a wonderful seafood spread, I recommend my Clams and Shrimp a la Marinera and some Baked Razor Clams, both fantastic for sharing.

Ingredients

Here are the ingredients you need

  • 2 kg fresh coquinas (wedge clams)
  • 1 large onion
  • 3 cloves of garlic
  • 1 tablespoon cornstarch
  • 1 teaspoon hot smoked paprika
  • 500ml fish stock
  • Extra virgin olive oil
  • Fresh parsley
  • 1 glass of white wine
  • 3 medium tomatoes, grated or crushed
  • Chipotle tabasco sauce

Step by step

Method

  1. 1The day before, soak the coquinas in cold salted water so they can release any trapped sand.
  2. 2Repeat the process a few times with fresh water to make sure no grit remains.
  3. 3Gently sauté the finely chopped onion in a generous drizzle of olive oil.
  4. 4Once the onion starts to turn translucent, add the minced garlic and cook briefly.
  5. 5Stir in the cornstarch and paprika, stirring constantly so the paprika doesn't burn.
  6. 6Pour in the glass of fish stock and bring to a boil for 5min.
  7. 7Chop the parsley and stir it in, along with the crushed tomatoes and white wine.
  8. 8Cook for 2min, then add the coquinas.
  9. 9Once they have opened up, taste the sauce and adjust the salt if needed.
  10. 10Add chipotle tabasco to taste.
  11. 11And that's it! Our COQUINAS A LA MARINERA are ready.

Frequently asked questions

How do I clean coquinas so there is no sand left?

Soak them in cold salted water in the refrigerator for one to two hours, then rinse them gently. Discard any clams with cracked shells or that don't close when gently tapped before cooking, as well as any that remain closed after cooking.

How long do coquinas a la marinera keep in the fridge?

Store them with their sauce in an airtight container and get them into the fridge within two hours of cooking. Enjoy them within one or two days, and reheat only the portion you plan to eat until piping hot.

Can I make coquinas a la marinera without any spicy heat?

Yes, just swap the hot paprika for sweet paprika and leave out the chipotle tabasco. Keep all the other ingredients the same to maintain that delicious base of tomato, white wine, and fish stock.
