Today I'm bringing you a wonderful seafood recipe that is quick to make and ideal for sorting out a special lunch or dinner without complicating your life in the kitchen: squid with king prawns.

The pairing of tender, caramelized onions with squid and king prawns, gently reduced with a splash of white wine, creates an incredible sauce with so much flavor in just a few minutes.

Ingredients

  • 2 large sweet onions
  • 5 medium squid
  • 500 g frozen king prawns
  • 1 glass white wine
  • Salt
  • Pepper
  • Extra virgin olive oil

Step by step

  1. 1Soften the chopped onion in a shallow pot with a splash of extra virgin olive oil until it is nicely golden.
  2. 2Add the cleaned squid sliced into rings and cook for a few minutes.
  3. 3Add the king prawns.
  4. 4Season with salt and pepper to taste.
  5. 5Pour in the glass of white wine.
  6. 6Cook over high heat for about 5 minutes so the alcohol evaporates and the sauce reduces.

Tips and tricks

Thaw the king prawns beforehand and pat them thoroughly dry with paper towels so they don't release too much water while cooking.

Use a good-quality dry white wine, as it gives the reduction its main character.

Don't cook the seafood longer than indicated to keep the squid and prawns from turning rubbery.

Frequently asked questions

Can I replace the king prawns with another type of seafood?

Yes, you can swap them for large shrimp or regular prawns, fresh or thawed, keeping the same cooking times.

Do I need to thaw the king prawns before cooking?

I recommend thawing and draining them well beforehand to prevent excess liquid from watering down the sauce.

How do I store leftovers?

You can keep them in an airtight container in the fridge for up to 2 days. To serve, gently reheat over low heat in a pan.
