Ingredients

Here are the ingredients you need for this recipe

  • 1 eggplant
  • 1 turkey breast

For the sauce

  • 4 large ripe tomatoes
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon crushed cayenne pepper
  • 1 teaspoon olive oil

Step by step

Method

  1. 1First, we'll make our spicy tomato sauce.
  2. 2Wash the tomatoes well and blend them thoroughly with a blender.
  3. 3Pour the blended tomatoes into a pot and cover with a lid.
  4. 4Once reduced, add the spices to taste and the teaspoon of olive oil.
  5. 5Simmer over low heat until all the liquid from the tomatoes has reduced.
  6. 6If you don't have pre-cooked natural turkey breast, you can use regular fresh turkey breast; just cook it steamed, grilled, or microwaved, however you prefer. Go ahead and cook the breast.
  7. 7While the turkey breast and tomato sauce are cooking, wash the eggplant well and slice it into strips.
  8. 8Cook the eggplant slices on both sides on a griddle or non-stick grill pan and set aside.
  9. 9Once the turkey breast is ready, shred it finely and stir it into our tomato sauce.
  10. 10Mix well so all the flavors come together.
  11. 11Assemble the dish by placing the eggplant slices on a plate with the sauce spooned over the top.
  12. 12Done! Our eggplant with turkey is ready to enjoy.
