Stuffed Eggplants with Pickled Mussels

Today I'm making stuffed eggplants with pickled mussels, a simple recipe to bring something special to the table using just two tins from the pantry. I love how the tender eggplant balances the punchy flavor of the escabeche marinade and sweet, well-softened onion—that combination is what makes the filling so delicious.

To cook the eggplant, I use the microwave so there's no need to turn on the oven. With garlic, a splash of sherry vinegar, and cumin to taste, the filling hardly needs anything else. It's a wonderful option for lunch or dinner for two, and you can easily make it ahead if you're short on time the next day.

Ingredients

Here are the ingredients

  • 1 large eggplant
  • 1 large onion
  • 2 cloves garlic, finely minced
  • 2 cans mussels in escabeche (pickled sauce)
  • 1 splash of sherry vinegar
  • Pink salt
  • Extra virgin olive oil
  • Ground cumin to taste

Step by step

Method

  1. 1Cut the eggplant in half lengthwise, score the flesh with crosshatch cuts, and sprinkle with salt so it sweats out any bitterness (leave it for 5 min). Once done, pat away the released moisture with paper towels.
  2. 2Place the halves on a microwave-safe plate and microwave on high for about 12-15 min.
  3. 3Add olive oil to a skillet and gently cook the chopped onion until it turns translucent and starts to brown.
  4. 4Add the minced garlic and sauté briefly.
  5. 5Remove the eggplant from the microwave and carefully scoop out the flesh using a spoon, leaving the skins intact.
  6. 6Finely chop the eggplant flesh and add it to the skillet, sautéing everything together.
  7. 7Add the well-drained mussels, gently breaking them up with your spoon as they cook.
  8. 8Finally, season with salt and cumin to taste.
  9. 9Add a splash of sherry vinegar.
  10. 10Let the vinegar evaporate for a moment, then spoon the filling back into the eggplant skins.

Frequently asked questions

How long do these stuffed eggplants keep in the fridge?

You can keep them in the refrigerator for 2-3 days in a tightly sealed container. Store them as soon as they have cooled to room temperature, and reheat only the portion you are about to eat.

Can you freeze eggplants stuffed with mussels?

Yes, you can freeze them once cooked and completely cooled, ideally in individual portions using freezer-safe containers. Thaw them in the refrigerator and reheat thoroughly before serving; note that the eggplant texture may be slightly softer.

Can I substitute the sherry vinegar?

Yes, you can use a little white wine vinegar instead. Add it gradually and taste as you go, since the pickled mussels already provide plenty of acidity.
