This broccoli, tomato, and chicken gratin is one of those trusty microwave recipes I turn to whenever I want something quick and wholesome without any fuss. With a chicken breast, crushed fresh tomato, a small handful of broccoli, and shredded mozzarella, you have a lovely single-serving meal ready in no time. Prep takes just 5 minutes and cooking takes 11: perfect for busy days when you don't feel like washing pots and pans.

I love using a silicone microwave cooking case and finishing everything off with that melted layer of cheese on top. The tomato keeps the chicken juicy, the garlic and onion powder bring plenty of flavor without needing a sofrito, and the melted mozzarella brings every bite together. If you want that golden, bubbling top, just make sure to use your microwave's grill function.

Frequently asked questions

Can I melt the cheese if my microwave doesn't have a grill function?

Without a grill, the microwave will melt the mozzarella nicely, but it won't brown on top. You can simply enjoy it melted, or transfer the dish to an ovenproof baking dish and pop it under the oven grill for a few minutes; don't put the silicone case under an oven grill unless the manufacturer states it is safe.

Can I use frozen broccoli?

Yes, though it may release extra water and slightly alter the cooking time. I'd thaw and drain it beforehand so it doesn't dilute the tomato sauce, and make sure the chicken is cooked through.

How should I store any leftover chicken and broccoli?

Store it in an airtight container in the fridge within two hours of cooking, and enjoy it within 3 days. When reheating, make sure it is piping hot right to the center.
