Today I'm making pork ribs with potatoes and rice, the kind of comforting dish that's meant to be shared around the table and savored without rushing. The deep flavor starts by getting a nice golden sear on the ribs, then comes together with a good homemade vegetable broth, smoked paprika, and fresh rosemary. Everyday ingredients, but together they make an incredibly flavorful meal.

If you love a hearty rice with pork ribs and veggies, here I also add carrots, green beans, and a handful of sweet peas alongside the potatoes. I use round short-grain rice, which soaks up all that rich broth beautifully. These amounts make four generous servings—perfect for a weekend family meal when I have just over an hour to cook.

Here are the ingredients you'll need for this recipe

  • 1/2kg pork ribs, chopped
  • 1 onion
  • 1 small handful of peas
  • 1 handful of green beans
  • 1 large carrot
  • 1 small potato
  • 2 garlic cloves
  • 1L homemade vegetable broth
  • 250g round short-grain rice
  • Pink Himalayan salt
  • Smoked paprika
  • Black pepper
  • Fresh rosemary
  • Extra virgin olive oil

Step by step

Method

  1. 1In a paella pan or wide skillet with a drizzle of olive oil, sear the pork ribs until nicely browned all over, then remove and set aside.
  2. 2In the same pan, gently sauté the chopped onion until soft and translucent.
  3. 3Once softened, remove the onion and blend it smooth with the vegetable broth; set aside.
  4. 4Add the remaining vegetables to the pan—diced carrot and potato, green beans, peas, and minced garlic—with another splash of olive oil, and sauté everything well.
  5. 5Season to taste with salt, fresh rosemary, and smoked paprika, then pour in the broth mixture, return the ribs to the pan, and bring to a boil.
  6. 6Turn off the heat and let everything rest until you're about ready to eat.
  7. 7About 20 minutes before serving, bring the mixture back up to a boil and stir in the rice.
  8. 8Cook for 15 minutes, turn off the heat, and let the rice rest for 5 minutes.
  9. 9Serve with freshly ground black pepper sprinkled over the top.
  10. 10And that's it! Our comforting Rice with Pork Ribs and Potatoes is ready.

Frequently asked questions

How should I store leftovers?

Transfer any leftovers to shallow containers and get them into the fridge as soon as possible, ideally within an hour. Enjoy within 24 hours, and reheat only the portion you're eating until it is piping hot all the way through.

Can I freeze this rice dish?

You can, though the potatoes can turn a bit mealy and the rice softens considerably once thawed. I always think it's best eaten fresh, but if you need to freeze it, cool it quickly, freeze in individual portions, and defrost overnight in the refrigerator.

Can I use frozen peas and green beans?

Yes, you can use both straight from the freezer without thawing first. Just keep an eye on cooking times so they stay tender and don't end up overcooked.
