Today we're making rice with pork ribs and green garlic, the kind of meal that invites you to slow down and linger around the table. We brown the pork ribs well and make the most of all their flavor to get a rice dish rich in depth. With a good sofrito base and a short rest at the end, it's ready to share.

Ingredients

Here are the ingredients you'll need

  • 200g short-grain rice
  • 600ml chicken broth
  • 1/2kg chopped pork ribs
  • 1 handful green garlic shoots
  • 1 handful mushrooms
  • 2 garlic cloves
  • 2-3 tbsp healthy tomato sauce
  • Pink salt
  • Hot paprika
  • Extra virgin olive oil

Step by step

Method

  1. 1Drizzle a little oil into the paella pan, season the ribs with salt, and cook until nicely browned; set aside.
  2. 2Cook the mushrooms until golden brown; set aside.
  3. 3Sauté the green garlic until lightly golden, then stir in the 2 minced garlic cloves.
  4. 4Stir in the tomato sauce and cook it down well.
  5. 5Return the reserved ingredients to the pan and add the hot paprika.
  6. 6Finally, pour in the chicken broth and bring it to a boil. Turn off the heat and let it sit until you're ready to cook lunch.
  7. 720 minutes before serving, taste the broth and adjust the salt.
  8. 8Bring it back up to a boil, stir in the rice, and turn down the heat. Cook for 15 minutes (if it looks a little dry, add a small splash of water in the final minutes).
  9. 9Once the time is up, cover the pan and let it rest for 5 minutes.
  10. 10Done! We can now dig into our RICE WITH PORK RIBS AND GREEN GARLIC
