Today I'm making some rice, zucchini, and cheese fritters to give a delicious second life to leftover cooked rice sitting in the fridge. It's a wonderful no-waste recipe: mix the ingredients together, let the mixture rest, and cook the fritters in a pan. I love pairing them with a fresh salad for an easy, fuss-free lunch or dinner.

The egg binds the rice and grated zucchini nicely, while the cheese adds fantastic flavor alongside the garlic and onion powder. These leftover rice fritters are great for sharing: this recipe yields four servings, with no flour batter needed.

Frequently asked questions

Do I need to drain the grated zucchini?

If it releases a lot of moisture, squeeze it well in a clean kitchen towel or press it through a fine sieve before mixing. That way the mixture won't be too wet and the fritters will hold together much better.

Can I swap the protein cheese for another cheese?

Yes, you can use any good melting shredded cheese, like mozzarella or a mild semi-cured cheese. Use the same quantity, keeping in mind that the flavor profile and fat content will vary slightly.

What kind of cooked rice should I use for these fritters?

Any leftover cooked rice that has been chilled quickly and kept in the fridge works, ideally from the day before. Never use cooked rice that has sat at room temperature for more than two hours, and make sure to cook the fritters until piping hot all the way through.
