Rice with Chicken Wings

Be the first to rate it!

At home we love making this rice with chicken wings whenever we crave a deeply flavorful, fuss-free meal. First, we brown the wings and use that same flavorful pan to cook the red pepper and make the sofrito with garlic and tomato. That rich base, along with good chicken broth, is what gives the rice so much flavor without needing complicated ingredients.

If you're looking for an easy chicken wings and vegetable rice, this combination with bell pepper and green beans makes a wonderful weekend lunch. The amounts yield three generous portions, and with a quick rest at the end, you get that perfectly dry, tender rice we love so much at home.

If you enjoy chicken rice dishes, I recommend my chicken, sausage, and vegetable rice and my creamy garlic chicken rice for tasty everyday ideas.

Ingredients

Here are the ingredients you need

  • 8-9 whole chicken wings
  • 220g round rice
  • 1 large red bell pepper
  • 1 handful of frozen green beans
  • 3 garlic cloves
  • 3-4 tbsp crushed canned tomatoes
  • Extra virgin olive oil
  • Hot paprika
  • Pink salt
  • 700ml chicken broth

Step by step

Method

  1. 1Cut the wings into 3 pieces and add them to the paella pan with a generous drizzle of olive oil, cooking until golden, then set aside.
  2. 2In that same oil and rendered chicken fat, sauté the bell pepper until nicely browned, then set aside as well.
  3. 3Add the green beans and sauté. Add the minced garlic, let it cook gently without burning, and stir in the crushed tomatoes.
  4. 4Let the tomato cook down, and once the sofrito comes together, add hot paprika to taste.
  5. 5Return the wings and red pepper to the pan, mix well, and pour in the broth (double the volume of broth to rice so it finishes dry and just right).
  6. 6Bring to a boil, then turn down the heat and simmer for about 5min.
  7. 7Turn off the heat and set aside until lunchtime. (This lets all the flavors meld and concentrate).
  8. 8About 20min before sitting down to eat, turn the heat back on and bring it to a boil.
  9. 9Add the rice and scatter it evenly across the pan.
  10. 10Cook for 15min over medium heat.
  11. 11Turn off the heat and let it rest for 5min.
  12. 12All done! Our rice with chicken wings is ready to serve.

Frequently asked questions

Can I use fresh green beans instead of frozen?

Yes, you can use fresh green beans, washed, trimmed, and cut into pieces. If they are thick, I recommend boiling them for a few minutes beforehand so they end up tender by the time the rice is done.

How should I store leftover rice with chicken wings?

Divide leftovers into shallow containers and put them in the fridge within an hour, without leaving them to cool completely at room temperature. Eat within 24 hours and reheat only the portion you're having, ensuring it is piping hot throughout.

Can I swap the hot paprika for sweet paprika?

Yes, you can substitute sweet paprika in the exact same amount. That's what I would do if children are eating or if you don't care for spicy food at home.
