Ingredients

Here are the ingredients you need for 3 people

  • 400g red prawns
  • 300g round rice
  • 2 garlic cloves
  • 1 tsp tomato paste
  • Extra virgin olive oil
  • Pink salt
  • 1l fish stock or fumet
  • Squid ink

Step by step

Method

  1. 1Add a drizzle of olive oil to the paella pan, sear the prawns briefly on both sides, and set them aside.
  2. 2Add the finely minced garlic, and just before it browns, stir in the tomato paste and a pinch of salt.
  3. 3Cook the tomato paste until it darkens and fries nicely.
  4. 4Add the rice and toast it gently for a minute or two so it absorbs all the flavours.
  5. 5In a small cup, dissolve the squid ink in a little bit of warm stock.
  6. 6Cover the rice with the rest of the stock and pour in the dissolved ink.
  7. 7Let it cook for 15min to get the rice perfectly al dente.
  8. 8Arrange the red prawns on top, take the pan off the heat, cover with a clean kitchen towel, and let it rest for 3min.
  9. 9Done! Our BLACK RICE WITH RED PRAWNS is ready to serve

Notes

  1. 1If you prefer your rice softer, cook it for 18min on the heat and let it rest off the heat for 3min (you can also add a splash more stock if needed)
