Brown Rice Pudding with Peanut Butter

Be the first to rate it!

Yes, you can make rice pudding with brown rice, and this peanut butter version is one of those easy treats I love to enjoy thoroughly chilled, straight from the spoon. I make it with unsweetened plant-based milk and crunchy peanut butter: just three ingredients for a single-serving dessert, perfect when you feel like making something special just for yourself.

The peanut butter brings richness and that nutty flavor we love so much, while the brown rice keeps a firmer, hearty bite. To get this peanut butter rice pudding just right, I always check that the grain is nice and tender before pulling it off the heat. Then I let it rest in the fridge and, right before serving, I like to finish it with a little extra crunchy peanut butter.

Frequently asked questions

How long does brown rice pudding keep in the fridge?

Store it in an airtight container and eat it within 2 days. Cool it down quickly after cooking and put it straight into the fridge without leaving it at room temperature for more than 2 hours.

Can I use smooth peanut butter instead of crunchy?

Yes, you can use the same amount of smooth peanut butter, ideally 100% peanuts. It will make it extra creamy, though you won't get those little crunchy bits from the crunchy version.

Is this brown rice pudding gluten-free?

Brown rice and peanuts are naturally gluten-free, but always check the labels on your peanut butter and plant-based milk. If you use oat milk, make sure it is certified gluten-free.
