Ingredients

Here are the ingredients you'll need for this recipe

  • 150 g rice
  • 200 ml water
  • 300 ml light coconut milk
  • Orange peel
  • 2 tbsp defatted cocoa powder
  • 2 tbsp homemade date syrup

Equipment

  • Kitchen robot

Step by step

Method

  1. 1Attach the stirring paddle to your kitchen robot instead of the blades so the rice grains don't break up.
  2. 2Add the rice and water to the bowl and set for 8 minutes without stirring – temperature 90 – heat power 8.
  3. 3Next, add the coconut milk, orange peel, and date syrup, and cook for 10 minutes – speed 1 – temperature 100 – heat power 3.
  4. 4Once that time is up, add the cocoa powder and mix for 3 minutes at speed 3 to ensure there are no lumps.
  5. 5Let the rice pudding chill and set in the fridge for at least two hours.
  6. 6Serve with a little fresh orange peel and a dusting of cocoa on top.
  7. 7All done! Our Creamy chocolate rice pudding is ready to enjoy.

Method without a kitchen robot

  1. 1In a small saucepan over medium heat, combine the rice and water and bring to a boil.
  2. 2Turn the heat down to low, add the coconut milk, orange peel, and date syrup, and cook for 10 minutes on the lowest heat, stirring constantly.
  3. 3After that, add the cocoa powder and whisk well so no lumps remain.
  4. 4Cook for another 5 minutes.
  5. 5Let the rice pudding rest and chill in the fridge for at least two hours.
  6. 6Serve with a little orange zest and cocoa powder dusted over the top.

Tips and variations

  1. 1You can make it lighter by swapping the date syrup for your sweetener of choice.
  2. 2You can use coconut drink instead, though it won't turn out quite as creamy.
  3. 3You can use brown rice, but you'll need to increase the amount of liquid and cooking time.
