Today we're treating ourselves to this Cocoa and Peanut Cheesecake, a no-bake recipe made with whipped quark and cocoa powder. We love the contrast between its creamy texture and the peanut butter topping with crunchy crisps, and all it takes is a few simple steps and a little patience while it sets in the fridge.

Prep: 15 minCook: 2 minServes: 6

Ingredients

Here are the ingredients you'll need for this recipe

  • 500gr 0% fat whipped quark (queso fresco batido)
  • 6 gelatin sheets
  • Half a cup of milk (whatever kind you like)
  • 3 tablespoons raw cocoa powder
  • 100% natural peanut butter
  • Crispy protein balls
  • Sweetener (optional)

Step by step

Method

  1. 1Soak the gelatin sheets in cold water.
  2. 2Pop the cup of milk into the microwave for about 2 minutes.
  3. 3Take it out of the microwave.
  4. 4Squeeze the excess water from the gelatin sheets and add them to the warm milk.
  5. 5Whisk well until completely dissolved; I used a hand whisk.
  6. 6In a bowl, add the whipped quark, cocoa powder, and sweetener.
  7. 7Mix well until everything is smooth and combined.
  8. 8Now pour in the milk and mix well once more.
  9. 9Pour the mixture into a mould.
  10. 10Chill in the fridge for at least 4 hours, though overnight is best.
  11. 11To serve, spread a thin layer of peanut butter on top and scatter with crunchy protein balls.
  12. 12And that's it! Our Cocoa and Peanut Cheesecake is ready to enjoy.
