Ingredients

Here are the ingredients for 3 people

  • 1 garlic clove
  • 1 ripe tomato
  • 1 Italian green pepper
  • 600g king prawns
  • 800ml prawn stock
  • 360g fideuà noodles (number 3 or 4)
  • Pink salt
  • Extra virgin olive oil

Step by step

Process

  1. 1Dice the pepper and garlic into tiny pieces.
  2. 2Add the pepper to the paella pan with a drizzle of extra virgin olive oil and a pinch of salt.
  3. 3Cook over low heat until it starts to turn golden.
  4. 4When the pepper begins to brown, add the minced garlic and sauté everything well.
  5. 5Stir in the grated tomato.
  6. 6Cook the tomato down thoroughly so it adds plenty of flavor and color.
  7. 7Once the sofrito is nicely cooked, add the noodles and sauté them briefly.
  8. 8Cover with the prawn stock, which should already be boiling.
  9. 9Let it cook over medium heat for 10 minutes, then arrange the king prawns on top and cook over medium-high heat for 5 minutes.
  10. 10Turn off the heat and let it rest for 5 minutes.

Extras

  1. 1Depending on a few factors, the pan might ask for a bit more stock.
  2. 2Add more boiling stock if needed and crank up the heat for the final minutes.
