Sauces & basics
Be the first to rate it!

Today we're making a homemade Raf tomato sauce with fresh little tomatoes and a generous splash of extra virgin olive oil. Using the pressure cooker saves us time and leaves us with a ready-to-go sauce that we can store or freeze to pair with our favorite dishes throughout the week.

Ingredients

Here are the ingredients you need

  • 2kgs raf tomatoes
  • 1 tsp pink salt
  • Pinch of baking soda
  • Extra virgin olive oil

Step by step

Method

  1. 1Wash the tomatoes.
  2. 2Place them in the blender or food processor jug and blend thoroughly.
  3. 3Next, transfer to the pressure cooker and add a generous drizzle of olive oil, the salt, and a pinch of baking soda.
  4. 4Close the pressure cooker and set over medium-high heat.
  5. 5When it starts to whistle or release steam, lower the heat and cook for 12 to 15min.
  6. 6Turn off the heat and release the steam.
  7. 7Open carefully so you don't burn yourself.
  8. 8Transfer to food containers and, once cooled, store in the fridge or freeze.

Extras

  1. 1You can make this without a pressure cooker—it's basically the same, you'll just need to simmer it on the stove for a bit longer.

Tips and tricks

A pinch of baking soda cuts through the acidity of the tomatoes; don't add more than necessary.

If you prefer a smoother sauce, run it through a food mill to remove skins and seeds.

Store it in tightly sealed glass jars in the fridge for a few days, or freeze in portions.
