Today I'm sharing a staple that's never missing from my pantry: my healthy tomato and onion sofrito. This healthy tomato sauce is wonderful to keep in the fridge or freeze, made entirely from scratch without any fuss.

All you need are ripe red tomatoes, onions, and good extra virgin olive oil to achieve that incredible traditional flavor. It's the ultimate versatile base to enrich any pasta, meat, or vegetable dish throughout your week.

Ingredients

Here are the ingredients you need for this recipe

  • 3kgs ripe red tomatoes
  • 3 onions
  • Sweetener (optional)
  • Extra virgin olive oil

Step by step

Method

  1. 1Wash and dice the tomatoes, then place them into a large pot.
  2. 2Dice the onions and add them to the pot with the tomatoes (you can add a splash of extra virgin olive oil at this stage).
  3. 3Cover with a lid and bring to a boil; once boiling, lower to medium heat and simmer until all the liquid has reduced (about 1 hour).
  4. 4Once the sofrito is nicely concentrated, stir in a touch of sweetener if you like to balance the acidity.
  5. 5All done! Our healthy tomato and onion sofrito is ready.

Extras

  1. 1With these quantities you'll have plenty of sofrito to spare, as 3kgs of tomatoes yields a generous batch. I love cooking this sofrito slowly for an hour and saving the rest for other dishes—pasta, rice, lasagna, and more. When I make meatballs, I portion the leftover sauce into freezer bags (one 2-serving portion per bag); this saves freezer space, time, money, and energy, since cooking once gives us enough delicious base for several meals.
