Today we're tying on our aprons to make lentils with vegetables and ham shavings, a simple, comforting stew packed with flavor. Made with pardina brown lentils and the earthy aroma of bay leaves, this is one of those home-cooked dishes that tastes even better when left to rest and enjoyed the next day.

Ingredients

Here are the ingredients you will need for this recipe

  • 1 head of garlic
  • Bay leaves
  • 1 handful of peas
  • 1 handful of green beans
  • 1 handful of baby carrots
  • 1 large onion
  • 500g pardina brown lentils
  • 2 dried cayenne chilies (optional)
  • Himalayan pink salt
  • Sweet paprika

Step by step

Method

  1. 1Peel and finely chop the onion.
  2. 2Place all the vegetables into a large pot.
  3. 3Remove only the loose papery outer skin from the whole head of garlic (leaving the cloves intact) and add it whole to the pot.
  4. 4Add the bay leaves and dried chilies as well.
  5. 5Rinse the lentils under cold water to clean them, then add them to the pot.
  6. 6Cover with water (about double the volume of the lentils in the pot).
  7. 7Bring to a boil, then turn the heat down to low.
  8. 8Simmer gently for about 30-40 minutes.
  9. 9Once the lentils are tender, turn off the heat and stir in the ham shavings.
  10. 10Let it rest so all the flavors meld together (as you know, cozy stews are always richer and tastier the next day).
  11. 11Done! Our lentils with vegetables and ham shavings are ready.
