Today we're making a comforting pot of lentils with vegetables and brown rice, the kind of hearty dish you want to savor slowly by the spoonful. We combine brown pardina lentils with carrot and a broth that turns wonderfully thick and rich once we blend the cooked vegetables right back in. Time to get our pot on the stove for a simple, homemade meal that's perfect for our weekly menu.

Ingredients

Here are the ingredients you'll need

  • 400g brown lentils (pardina lentils)
  • 200g cooked brown rice
  • 1 Large carrot
  • 1 Large onion
  • 1 Head of garlic
  • Bay leaves
  • Sweet paprika
  • Fresh chives
  • Salt
  • Water

Step by step

Method

  1. 1Add everything to the pot except the cooked brown rice.
  2. 2Cover with water about three fingers above the lentils, as they will expand and thicken the stew.
  3. 3Cover the pot and simmer over medium-low heat for 30-45 minutes.
  4. 4Once you see the broth has turned dark and thick, remove the whole vegetables, garlic, and bay leaves.
  5. 5Blend the vegetables together, leaving out the garlic head and bay leaves.
  6. 6Stir the blended vegetable mixture back into the lentils.
  7. 7Add the cooked brown rice and let everything simmer together for a couple of minutes.
  8. 8All done! Time to enjoy our LENTILS WITH VEGETABLES AND BROWN RICE.
