Chicken & turkey
Be the first to rate it!

Today we are making meatballs in pumpkin sauce, the kind of dish that practically begs you to bring bread to the table so you don't leave a single drop behind. Coconut milk gives us a wonderfully smooth and creamy sauce, perfect for coating every bite. We let them rest for a few hours and get to enjoy a truly comforting, flavour-packed homemade meal.

Ingredients

Here are the ingredients you need

  • Chicken and turkey meatballs
  • 1/2 butternut squash
  • 1 large onion
  • Pinch of salt
  • 1 can of coconut milk
  • Ground black pepper
  • Extra virgin olive oil
  • 1 glass of vegetable broth

Step by step

Method

  1. 1In a frying pan with a drizzle of oil, brown the meatballs all over to sear them, then set aside.
  2. 2In the same pan, cook the diced squash until lightly browned.
  3. 3Once it takes on a bit of colour, add the finely chopped onion and let it soften gently.
  4. 4When the onion begins to turn golden, pour in the vegetable broth, season with salt and pepper, and cook for about 15min.
  5. 5After that time, stir in the coconut milk and cook for another 5min.
  6. 6Blend everything thoroughly until smooth using an immersion blender or food mill.
  7. 7Return the meatballs to the sauce and simmer for 5 minutes so all the flavours come together.
  8. 8Let the dish rest for a couple of hours before serving.
  9. 9And that's it! Our MEATBALLS IN PUMPKIN SAUCE are ready to enjoy.
