Ingredients

Here are the ingredients you need

  • Chicken and turkey meatballs
  • 1 handful baby spinach
  • 1 large onion
  • 2 garlic cloves
  • 1 can coconut milk
  • Ground black pepper
  • Extra virgin olive oil
  • Pinch of salt
  • 1 handful cashews

Step by step

Method

  1. 1In a skillet with a drizzle of olive oil, sear the meatballs to brown all sides, then set them aside.
  2. 2In the same skillet, cook the finely chopped onion until golden.
  3. 3Once lightly golden, add the fresh spinach and minced garlic, letting everything soften gently.
  4. 4When the spinach has wilted, pour in the coconut milk, season with salt and pepper, and cook for about 5min.
  5. 5Blend the mixture thoroughly along with the cashews in a blender until smooth.
  6. 6Pour the blended sauce back into the skillet, add the meatballs, and simmer for 5 minutes so the flavors meld together.
  7. 7Let it sit for a couple of hours before serving so the flavors deepen.
  8. 8All done! Our MEATBALLS IN SPINACH AND CASHEW SAUCE are ready to enjoy.
