Ingredients

Here are the ingredients

  • 500g fresh mussels
  • 1 spring onion
  • 2 garlic cloves
  • Juice of 1 lemon
  • Fresh ginger zest
  • 1 tablespoon ground cumin
  • Pink salt
  • Extra virgin olive oil
  • 1 small glass of white wine
  • Parsley
  • 1 tablespoon multigrain flour
  • 1 heaping tablespoon medium-hot mustard

Step by step

Instructions

  1. 1Clean the mussels thoroughly, place them in a pot, cover, and steam them dry with no added water until they all open.
  2. 2Meanwhile, in a food processor, blend the spring onion, garlic, ginger, a pinch of salt, cumin, and lemon juice into a purée.
  3. 3Transfer the mixture to a skillet with a drizzle of extra virgin olive oil.
  4. 4Add the tablespoon of flour, stirring constantly so it doesn't burn.
  5. 5Next, pour in the glass of white wine and stir well to dissolve the mixture smoothly.
  6. 6Finally, stir the mustard into the sauce and mix well to bring the flavors together.
  7. 7Remove the mussels from their shells and toss them into the sauce.
