Today we're making curried mussels with coconut milk and homemade tomato sauce, a flavor-packed combination we love whenever we want something a little different. We steam the mussels and coat them in a creamy, aromatic sauce that's begging for crusty bread. You can enjoy them warm or cold, and freeze any leftover sauce for another day.

  4. 4Sprinkle the sauce with chopped fresh parsley.
  5. 5Arrange the mussels on a large serving platter or dish, discarding the empty half of each shell.
  6. 6Spoon the piping hot sauce generously over the mussels.
