4.0 (1 rating)

Today we are making mussels with vinaigrette, a fresh, flavourful appetizer that we love sharing at the table. We pair juicy tomatoes with a dressing of extra virgin olive oil and Sherry vinegar to give them that wonderful punch. With just a few simple steps, they are ready to enjoy without any fuss.

Ingredients

Here are the ingredients

  • 2kgs medium mussels
  • 2 tomatoes
  • 1 green bell pepper
  • 1 spring onion
  • 1 garlic clove
  • Extra virgin olive oil
  • Sherry vinegar
  • Pink salt
  • Black pepper

Step by step

Method

  1. 1Clean the mussels thoroughly, removing the beards with a small knife and taking extra care not to crack the shells. Scrape away any barnacles or impurities on the outside.
  2. 2Place them into a large pot over high heat.
  3. 3As soon as they open up, remove from the heat and let them cool.
  4. 4Meanwhile, finely dice the vegetables into very small pieces.
  5. 5Transfer them all to a bowl, add olive oil, vinegar, salt, and pepper to taste, and mix well.
  6. 6Once the mussels are cool, remove the empty half of each shell and arrange the mussels on their half-shells on a serving platter.
  7. 7Spoon the vinaigrette generously over each mussel.
  8. 8Time to enjoy our MUSSELS WITH VINAIGRETTE!
