These dinner tostas are my go-to when I want a fun, varied spread without stressing in the kitchen. With crusty bread and all kinds of tasty toppings, I assemble a big platter to set right in the middle of the table and share over good conversation and plenty of laughs. The amounts are planned for six people, with 15 minutes of prep and 20 of cooking.

If you need easy toast ideas for dinner, here are great combinations to step outside the usual routine: burrata with pesto and cherry tomatoes, guacamole with smoked salmon, or seared fresh goat cheese with chistorra sausage. To keep the bread crisp, I like to assemble the tostas right before serving, especially the ones with sauces or juicy toppings.

To complete the dinner spread, I love pairing these with a Cheese and charcuterie board and some Cherry tomato, light mozzarella, and pesto prawn skewers to share.

  1. 1Spread the bread with pesto, spoon on the creamy center of the burrata, drizzle a little extra pesto over top, and arrange quartered cherry tomatoes over it. Finish with fresh basil leaves and a light drizzle of olive oil and pinch of salt over the tomatoes.

GULAS AND SHRIMP TOSTA WITH ALIOLI

Frequently asked questions

Can I prepare these tostas ahead of time?

You can prep and refrigerate the toppings separately beforehand, but I recommend assembling the tostas right before dinner. That way, the guacamole, pesto, or burrata won't make the crusty bread soggy.

How do I store leftover tostas?

Store any tostas with perishable toppings in an airtight container in the fridge and enjoy them the next day, though the bread will soften up. Don't leave them at room temperature for more than two hours; if you haven't assembled them yet, keep the bread and toppings separate.

What can I use instead of burrata?

You can swap it for well-drained fresh mozzarella or the fresh goat cheese used in the other tosta. Both pair wonderfully with pesto, cherry tomatoes, and basil.
