Today we're making a pipirrana salad with ripe tomatoes and green pepper, a simple recipe packed with flavor to enjoy nicely chilled. At Cocinandomelavida, we love the mortar-and-pestle dressing that brings all the ingredients together and practically begs for bread for dipping. We let it rest in the fridge and take it straight to the table without any fuss.

Tips and tricks

Use very ripe tomatoes and Italian green frying peppers: they are the flavor base of any good pipirrana.

Remove the inner germ of the garlic so it is gentler to digest, and crush it well with coarse salt in the mortar.

Let it rest in the fridge for at least half an hour before serving so all the flavors meld together.
