Today we're making a pumpkin and pear soup with goat cheese, a combination we love for its smooth texture and contrasting flavors. We add a touch of curry powder and blend it until it's just how we like it, perfect for enjoying by the spoonful for a comforting lunch or dinner.

Ingredients

These are the ingredients you need for the burgers

  • 1 medium pumpkin
  • 2 large leeks
  • 2 Conference pears
  • Pink salt
  • 1 tablespoon curry powder
  • Water
  • Goat cheese log
  • 1 glass unsweetened oat milk
  • Extra virgin olive oil

Step by step

Method

  1. 1In a pot, gently sauté the finely chopped leeks.
  2. 2When they start to turn golden, add the diced pumpkin.
  3. 3Stir well and add the peeled, cored pears along with the curry powder.
  4. 4Let the pumpkin brown slightly, then cover with water (just enough to cover).
  5. 5Cook for 10 minutes over medium heat.
  6. 6Turn off the heat, add goat cheese to taste, and let it cool slightly.
  7. 7Once warm, transfer to a blender or food processor along with the glass of oat milk and salt to taste (reserving the cooking broth), and blend everything thoroughly.
  8. 8Once blended, gradually add broth until you reach your desired consistency.
  9. 9Done! Our PUMPKIN AND PEAR SOUP WITH GOAT CHEESE is ready to enjoy.
