Here are the ingredients you need for this recipe

  • 1 aubergine
  • 4 tbsp cooked quinoa
  • 1 handful cooked broccoli florets
  • 1 can tuna in spring water
  • Healthy tomato sauce
  • Grated high-protein cheese

Step by step

Method

  1. 1Preheat the oven to 200ºC.
  2. 2Wash the aubergine and cut it in half lengthwise.
  3. 3Make a few criss-cross incisions in the flesh and scoop it out using a spoon.
  4. 4Once hollowed out, place the aubergine halves upside down in the oven for about 5 minutes to soften.
  5. 5Meanwhile, chop the scooped-out aubergine flesh into small pieces and sauté it in an oil-free pan.
  6. 6Add the cooked broccoli florets.
  7. 7Add the well-drained can of tuna and cook for 5 minutes so the flavours come together nicely.
  8. 8Finally, stir in a spoonful of healthy sofrito and the cooked quinoa.
  9. 9Mix everything well and stuff the aubergine halves.
  10. 10Top with a little grated high-protein cheese.
  11. 11Bake at 200ºC for about 10 minutes until golden.
  12. 12And that's it! Our QUINOA AND TUNA STUFFED AUBERGINES are ready to enjoy.
