Ingredients

Here are the ingredients you need

  • Aubergines
  • Fresh spinach
  • 1 onion per aubergine
  • Diced serrano ham
  • Low-fat cheese
  • Extra virgin olive oil
  • Pink salt
  • Black pepper

Step by step

Method

  1. 1Wash the aubergines, slice them in half lengthwise, and score the flesh with criss-cross cuts.
  2. 2Microwave them for 6-10min until tender.
  3. 3Meanwhile, heat a drizzle of oil in a skillet and cook the onion and spinach until softened, seasoning to taste with salt and pepper.
  4. 4Carefully scoop out the aubergine flesh so you do not burn yourself, add it to the skillet along with the diced ham, and sauté everything together.
  5. 5Turn off the heat, add a generous handful of cheese to the skillet, and stir well to combine.
  6. 6Fill the aubergine skins with the mixture.
  7. 7Top with a little more cheese and diced ham, then bake in the oven until nicely melted and bubbly.
  8. 8Done! Now we can enjoy our STUFFED AUBERGINES WITH SPINACH AND HAM
