Ingredients

Here are the ingredients you need for this recipe

  • 200gr red lentil fusilli
  • 1 leek
  • 1/2 zucchini
  • 1 handful cherry tomatoes
  • 1 small handful walnuts
  • 1 small handful raisins
  • Pink Himalayan salt
  • Cayenne pepper (optional)
  • Chives (optional)

Step by step

Method

  1. 1Bring a pot of water to a boil, and once bubbling, add the fusilli and cook for 5 minutes.
  2. 2Once the time is up, transfer them to a colander, rinse under cold water to stop the cooking, and drain well.
  3. 3Wash and slice the leek into rounds, then add it to a frying pan to brown gently.
  4. 4Wash and chop the zucchini into small pieces, then add it to the pan so it softens.
  5. 5Wash and slice the cherry tomatoes and add them to the pan as well.
  6. 6Season the vegetables to taste.
  7. 7Once they are nicely softened, add the lentil fusilli, raisins, and walnuts.
  8. 8Sauté for 5 minutes so all the flavours blend together well.
  9. 9In the last minute, stir in the finely chopped chives.
  10. 10All done! Our red lentil fusilli with leek and raisins is ready to enjoy.
