Ingredients

Here are the ingredients you need for this recipe

  • 60gr cooked brown rice
  • 1 leek
  • 2 carrots
  • 1 green bell pepper
  • Cherry tomatoes
  • Ground black pepper
  • Ground cayenne pepper
  • 1 small handful diced cured ham
  • 1 egg

Step by step

Method

  1. 1If you haven't cooked the rice yet, let's get to it: once the water starts boiling, cook it for about 20 minutes. After that, drain it, rinse under cold water to stop the cooking, and set aside.
  2. 2Wash, peel, and chop our vegetables.
  3. 3In a non-stick frying pan (a wok-style pan works great), cook the leek, carrot, and green pepper until tender and nicely golden.
  4. 4Once ready, add the diced ham and sauté so the flavours come together.
  5. 5Next, add our rice, mixing well, and let it sauté for 5 minutes.
  6. 6After that, add the cherry tomatoes and season to taste with black pepper and ground cayenne.
  7. 7While it finishes cooking over low heat, let's cook the egg.
  8. 8In a non-stick frying pan, crack the egg over low heat and cover with a lid.
  9. 9Cook until the white is completely set.
  10. 10All that's left is to plate up the rice and egg.
  11. 11All done! Our sautéed rice with vegetables and ham is ready to enjoy.
