Red Lentil Fusilli with Vegetables

Rice & pasta
Be the first to rate it!

This red lentil fusilli with vegetables is an easy way to switch up our usual pasta dishes. I make it with broccoli and roasted peppers, a colorful pairing that doesn't need many ingredients at all. At home, we love adding onion powder and sautéing everything together at the end so all the flavors meld together.

The recipe serves two and takes about 35 minutes between prep and cooking, making it perfect for a weeknight lunch or dinner. To help red lentil pasta keep its lovely texture, I recommend sticking to the package cooking time and not overcooking it: it still gets that final toss in the pan with the vegetables and extra virgin olive oil.

Frequently asked questions

How should I store the red lentil fusilli with vegetables?

Keep it in an airtight container in the refrigerator and enjoy within 2 to 3 days. When reheating in a skillet, add a splash of water if it seems dry and toss gently so the pasta doesn't break apart.

Is red lentil pasta gluten-free?

If it is made exclusively from red lentil flour, it is naturally gluten-free. If you are celiac, always check that the packaging specifies certified gluten-free, and check the labels on the rest of your ingredients as well.

Can I swap the broccoli for another vegetable?

Yes, zucchini or cauliflower work wonderfully. Just cook them until tender before tossing them with the pasta and roasted peppers for the final sauté.
