Today we're making vegetable and ham muffins, an easy recipe we adore because it's so simple to mix and match our favorite fillings. With carrot and wild asparagus, we make two different versions so every bite is a little treat. Plus, you can easily make them ahead and keep them in the fridge.

Ingredients

Here are the ingredients you need for this recipe

  • 10 egg whites
  • 2 eggs
  • 3 tablespoons 0% fat whipped fresh cheese or quark
  • 3 small carrots or 1 large carrot
  • 1 bunch of wild asparagus
  • Diced cured ham (you can substitute with cured pork loin)
  • Pink Himalayan salt

Step by step

Method

  1. 1Preheat the oven to 180ºC.
  2. 2While it heats up, prepare the muffins.
  3. 3Add the egg whites, eggs, and whipped fresh cheese to a blender jug.
  4. 4Blend well until completely smooth and set aside.
  5. 5Grate the carrot and finely chop the asparagus spears.
  6. 6Fill the muffin cups with the vegetables and ham (I made 6 with carrot and ham, and 6 with asparagus and ham).
  7. 7Pour the liquid mixture over until covered.
  8. 8Season with salt to taste.
  9. 9Bake for 20-25 minutes at 180ºC.
  10. 10Let them cool.
  11. 11And that's it! Our vegetable and ham muffins are ready.

Notes

  1. 1These quantities make 12 muffins.
  2. 2Watch out with the salt, as the cured ham is already salty.
  3. 3You can make them ahead of time and store them in the fridge.
  4. 4The filling is optional; you can make them with other vegetables, cheese, chicken, or whatever you fancy.
