Today we're making Baby Gem Boats with King Prawns in Escabeche, a zero-waste recipe giving a second life to the pulp left over from straining gazpacho. We prepare the escabeche marinade the day before and assemble the lettuce boats with avocado just before serving. It makes for a fresh, simple, and flavor-packed bite!

Ingredients

Here are the ingredients you need

  • Baby gem lettuce leaves
  • Frozen king prawns
  • Extra virgin olive oil
  • Ground cayenne pepper
  • Avocado

For the escabeche

  • 1 garlic clove
  • Bay leaves
  • Black peppercorns
  • Leftover solids from straining gazpacho
  • Apple cider vinegar

Step by step

Method

  1. 1Thaw the king prawns beforehand.
  2. 2In a skillet, add the leftover strained gazpacho solids (my recipe is a no-waste idea, but you can make a classic escabeche; there are tons of recipes on Google).
  3. 3Add 1/2 small glass of vinegar and 1/4 of water, the bay leaves, the finely minced garlic clove, and the peppercorns.
  4. 4Add the prawns and simmer gently over low heat for 10 minutes.
  5. 5Transfer to an airtight container and let rest in the fridge all day.
  6. 6The next day, wash the baby gem lettuce leaves.
  7. 7Fill each leaf with the chilled king prawns.
  8. 8Top with finely diced avocado.
  9. 9Finally, add a pinch of ground cayenne pepper and a drizzle of olive oil.
  10. 10Done! We can now dig into our BABY GEM BOATS WITH KING PRAWNS IN ESCABECHE.
