Ingredients

Here are the ingredients you need for this recipe

  • 1 roasted eggplant
  • 1/4 cabbage
  • 1 large carrot
  • 4 or 5 green beans
  • 100g brown rice
  • Curry powder
  • Onion powder
  • Pink Himalayan salt
  • 3 glasses of water or vegetable broth

Step by step

Method

  1. 1Wash the vegetables thoroughly, chop them up, and toss them into the skillet.
  2. 2Sear them over high heat, just as if you were cooking in a wok.
  3. 3Once they start getting some color, add the chopped roasted eggplant and sauté.
  4. 4Next, season to taste with pink salt, onion powder, and curry powder.
  5. 5Stir in the brown rice and cover with the water.
  6. 6When it comes to a boil, cover with a lid and let cook over medium heat for 25 minutes.
  7. 7Once the time is up, turn off the heat and let it rest for 5 minutes.
  8. 8All done! Our vegetable curry brown rice is ready to serve.

Extras

  1. 1There is no oil added because it really doesn't need it, but you can add a drizzle if you prefer.
  2. 2The brown rice will not turn out hard.
  3. 3If the rice still needs more time and all the water has absorbed, just add a splash more and finish over high heat.
  4. 4You can make this exact same recipe using any other vegetables you like.
