Chicken Sausage and Thyme Potato Skillet

These chicken sausages with thyme potatoes are one of those meals I make whenever I want to sort out lunch without overcomplicating things. I use canned cooked potatoes and cook everything in the same pan, so in 20 minutes I have an easy meal for three, without turning on the oven or making a mess.

What I love most is the herbal aroma of the thyme and how well it pairs with golden, browned sausages. Since the potatoes are already cooked, they just need to heat through and soak up all that flavor, which makes them super handy here. It's a great weekday option with just a few ingredients.

For a change of pace another day, I recommend my Chicken sausages with cherry tomatoes or Chicken sausages with onion and mushrooms, two great alternatives with the same main ingredient.

Ingredients

Here are the ingredients for 3 people

  • 500g chicken sausages
  • 1 can cooked potatoes
  • Thyme
  • Pink salt
  • Extra virgin olive oil

Step by step

Method

  1. 1In a skillet with a drizzle of extra virgin olive oil, brown the sausages cut into bite-sized pieces.
  2. 2Meanwhile, rinse the canned potatoes to remove their preserving liquid and slice them into rounds.
  3. 3When the sausages are nicely browned, set them aside on a plate.
  4. 4In the same skillet where you cooked the sausages, sauté the potatoes.
  5. 5Add a pinch of salt and thyme.
  6. 6When they start to turn golden, add the sausages back in and remove from the heat.

Frequently asked questions

How long do the chicken sausages and potatoes keep in the fridge?

You can keep them in the fridge for 2-3 days in an airtight container. When reheating, make sure both the sausages and potatoes are piping hot all the way through.

Can this skillet dish be frozen?

I don't recommend freezing this dish, as the texture of the potatoes tends to suffer once thawed. I prefer storing leftovers in the fridge and eating them within the next 2-3 days.

Can I use fresh potatoes instead of canned?

Yes, but you will need to boil them first until tender and drain them well before adding them to the skillet. Factor in that extra time: the 20-minute prep time relies on pre-cooked potatoes.
