Chicken Sausage and Tomato Pasta

Today I'm making chicken sausages in tomato sauce served with pasta, the kind of comforting meal you want on the table any day of the week. The sauce is homemade, using ripe plum tomatoes, onion, and carrot, and I use the very same pot to brown the sausages: this means fewer dishes to wash and lets the sauce soak up all those delicious browned bits.

I like using very ripe tomatoes because they bring so much natural flavor and make a wonderful sauce base. This chicken sausage and tomato pasta makes six servings and takes about an hour from start to finish. It's a great option for a relaxed family meal when you have time to cook without rushing.

Ingredients

Here are the ingredients

  • 1kg chicken sausages
  • 500g pasta

Ingredients for the sauce

  • 1kg ripe plum tomatoes
  • 1 onion
  • 1 carrot
  • Extra virgin olive oil
  • Pink salt

Step by step

Method

  1. 1Cut the sausages into bite-sized pieces and brown them well with a drizzle of oil in the pressure cooker (this is where we'll make the sauce next, so we don't dirty another pot). Once browned, set them aside.
  2. 2Finely chop or blend the onion and carrot.
  3. 3Add them to the pot and gently sauté until soft.
  4. 4Blend the tomatoes (I blend them with their skins on) and add them once the onion starts to turn golden.
  5. 5Cover, bring to high heat until steam starts releasing, then lower the heat and cook for 15 minutes.
  6. 6Once the time is up, release the pressure and let it rest.
  7. 7In another pot, cook the pasta in plenty of salted boiling water according to the package instructions.
  8. 8Once cooked, drain and add the tomato sauce and the browned sausages.
  9. 9Toss everything together well so the flavors meld and the pasta soaks up all that lovely sauce.

Extra tips

  1. 1I prefer to take the pasta off the heat just before it's fully done before adding the tomato sauce so it doesn't overcook.
  2. 2The longer you let the pasta simmer gently with the tomato sauce, the more delicious it will be.

Frequently asked questions

Can I freeze chicken sausage and tomato pasta?

Yes, though I prefer to freeze just the sausages with the sauce and cook the pasta fresh when serving, so it keeps its texture much better. Let everything cool, divide into airtight containers, and thaw in the fridge.

How long does it keep in the fridge?

Store it in an airtight container and eat it within 2-3 days, making sure to refrigerate it within two hours of cooking. When reheating, add a splash of water if the sauce has thickened up and heat thoroughly.

How can I make this recipe gluten-free?

Use certified gluten-free pasta and check the label on your chicken sausages, as some brands can contain gluten fillers. Keep an eye on the cooking time on the pasta package so it doesn't get mushy.
