Prep: 15 minCook: 40 minServes: 4

Ingredients

Here are the ingredients you'll need

  • 14 chicken meatballs
  • 150g chicken sausages
  • 300g thick fideo noodles
  • 1 large red bell pepper
  • 3 garlic cloves
  • 3-4 tablespoons crushed tomatoes
  • Extra virgin olive oil
  • Sweet smoked paprika from La Vera
  • Pink salt
  • 1L chicken broth

Step by step

Method

  1. 1Cut the sausages into bite-sized pieces and add them to the paella pan along with the meatballs and a generous drizzle of olive oil. Brown them well and set aside.
  2. 2Add the red bell pepper cut into strips, fry until tender, and set aside as well.
  3. 3Add the minced garlic, let it cook gently without burning, and stir in the crushed tomatoes.
  4. 4Let the tomato cook down, and once the sofrito begins to concentrate, stir in paprika to taste.
  5. 5Return the meat and red pepper to the pan, stir well, and pour in the broth (about twice the volume of the noodles so it cooks down dry and just right).
  6. 6Bring to a boil, then turn down the heat and let it simmer for about 5 minutes.
  7. 7Take it off the heat and let it rest until you're nearly ready to eat, letting those flavors settle and deepen.
  8. 8About 20 minutes before serving, turn the heat back on and bring the broth back to a boil.
  9. 9Add the fideo noodles and spread them out evenly across the pan.
  10. 10Cook according to the noodle package instructions, then remove from the heat and let rest for 5 minutes.
  11. 11And that's it! Our fideos with chicken sausages and meatballs are ready to enjoy.
