Today I'm getting right to work on these curried chickpeas with quinoa, a simple recipe to switch things up on busy weekdays. It has mushrooms, garlic, and that warm curry aroma I love so much, finished with an egg cooked right in the same skillet. It's a single-serving meal, perfect when I want something wholesome without any fuss.

To whip up this curried quinoa in just 20 minutes, I start with pre-cooked quinoa and chickpeas. The mushrooms bring earthiness and the curry powder ties everything together without needing an extra sauce. It's one of my favorite ways to use up leftovers from batch cooking and make a satisfying dish with just a handful of ingredients.

To keep switching up your meals, try my Quinoa with mushrooms and this Curried couscous with vegetables, two great alternatives with flavors that pair wonderfully with this dish.

Frequently asked questions

Are the quinoa and chickpeas weighed cooked?

Yes, the 80 g of quinoa and 60 g of chickpeas are cooked weights. If you're using canned chickpeas, rinse and drain them before weighing; if you're cooking them from dry, remember to account for the cooking time.

Can I freeze curried quinoa and chickpeas?

Yes, I recommend freezing the mixture without the egg in an airtight container once it has cooled down completely, leaving it at room temperature for no more than two hours. Thaw it in the fridge, and when you reheat it in the pan, crack the egg in fresh.

What can I use instead of button mushrooms?

You can swap them for finely diced zucchini or other wild mushrooms. Sauté them until tender and let any excess liquid cook off so the dish doesn't turn watery.
