No-Nori Cucumber Sushi

Rice & pasta
Be the first to rate it!

Today I'm making cucumber sushi without nori, a simple way to enjoy bite-sized sushi rolls with a crisp, refreshing crunch. I stuff a hollowed cucumber with seasoned sushi rice, avocado, and carrot, slice it into rounds, and serve it to share. With pre-cooked rice, it takes just 20 minutes and makes enough for two.

This cucumber sushi is wonderful if you're not a fan of seaweed or simply want a light, crisp appetizer. The sushi rice holds the filling neatly together, while the avocado adds rich creaminess. I love serving it with low-sodium soy sauce and sesame seeds; if you like some heat, a drizzle of sriracha is fantastic.

  • Carrot
  • Sriracha sauce (optional, for heat)

Method

  1. 1Carefully hollow out the cucumber using a small knife, removing all the seeds from the center.
  2. 2Peel the outside skin.
  3. 3Spoon the sushi rice inside, pressing down gently with a utensil so it packs in tightly.
  4. 4Cut the avocado and carrot into thin strips.
  5. 5Slide them into the center of the cucumber to fill the remaining space.
  6. 6Slice into half-centimeter rounds.
  7. 7Arrange on a plate or serving platter and garnish as you like.

  1. 1You can mix the sriracha with a little mayonnaise for a milder, creamier kick.

Frequently asked questions

Can I make this cucumber sushi ahead of time?

It's best assembled shortly before serving so the cucumber stays crisp and the avocado doesn't brown. If you need to make it ahead, keep it covered in the fridge and eat it within 24 hours, making sure your rice was freshly cooked and cooled promptly.

Can you freeze cucumber sushi?

I wouldn't recommend it. Once thawed, the cucumber loses its crunch and releases water, which ruins the texture of the rice filling. It's meant to be enjoyed freshly made.

How can I make this cucumber sushi gluten-free?

Swap the low-sodium soy sauce for certified gluten-free soy sauce or tamari. Double-check your sriracha label as well if you use it, as low-sodium does not always mean gluten-free.
