Today I'm sharing one of my go-to bakes for breakfast or an afternoon snack: a delicious gluten-free coconut and lemon cake. It turns out wonderfully tender, fragrant, and with that fresh citrus kick we love having with our coffee at home.

Besides being gluten-free, it has no added sugar, as I sweeten it naturally with homemade date paste. It's an easy, wholesome bake that lets you enjoy a slice of homemade cake whenever you feel like it.
